I just finished reading his Xanth series last month and I would have to say it was one of the better science-fiction/fantasy serieses I've read in a while. He's got quite an imagination and his sense of humor (levity?) isn't bad (I especially liked 'Dragon on a Pedestal' in this respect; Princess Ivy was great in her role as the 'innocent manipulator'). I do have one gripe about the series. Anthony listened too much to his readers and went out of his way to stick their puns into his stories (especially the later books).
