A new magazine, VIDEO & SOUND (proclaiming themselves as a "high
fidelity" publication -- and in my estimate they are) has run an
excellent, concise article addressing this question in Vol 2. (No
date on the cover). The article describes NTSC format and how BETA/VHS
formats represent this on tape and how each accomodates Hi-Fi stereo.

 I bought this magazine at a local drug store, so it is probably
available where you are.
