I suppose it's correct to assume that the ships computers are "listening" to 
the person who wants the food and the cards somehow help the computer to 
access the correct data field (i.e. the kitchen ).  Therefore the path is
something like: 1. inform the computer of your request.
                2. put in card corresponding to kitchen,cafeteria,or something
                   like that.
                3. the computer looks at card and accesses the correct field.
                4. and sends back what it's been told to send.


of course this is all just a theory, but it does seem to be the only possible
explanation, unless of course someone else has a better idea.
