(Incidentally, my Amaretto-Amaretti Chocolate Cheesecake, recipe posted previously, just won me a blue ribbon in this year's fair.) 3 eggs 2 cups zuchinni, shredded 2 cups flour 1 cup oil 1 cup sugar 1 tsp vanilla 1 tsp salt 1 tsp baking powder 1 tsp baking soda 1 Tbs cinnamon or nutmeg or both 1 cup raisins 1 cup walnuts, sliced Mix all ingredients together.
