                         ZUCCHINI BREAD

2 cups sugar
2 cups unsifted flour
1/2 t. salt
1/2 t. baking powder
1 t. baking soda
3 t. pumpkin pie spice

Mix in large bowl, make well in center of dough.  ADD...

3 eggs
1 c. vegetable oil
3 t. vanilla
2 c. grated zucchini (peeled)
1 1/2 c. nuts or raisins

Mix well.  Pour into 2 greased loaf pans or 1 9x13 cake pan.  Bake
at 350 for 1 hour or until done by testing with toothpick.
