Indo-China was Viet Nam, Laos, and Cambodia.

Southeast Asia includes the above countries, then gets a bit wild.  That is,
it's range can be extended or narrowed depending on how open minded one is
historically.  Generally included are Burma, Thailand, Laos, Cambodia,
Viet Nam, Maylasia, Singapore (the two at one point constituted Malaya, but
there were too many Moslem/Chinese conflicts), Indonesia, the Philippines.
There are several small countries on the island we know as Borneo, such as
Sabah and Sarawak.  Culturally, the indegenous inhabitants of Taiwan are
also Southeast Asian, but there aren't too many of them left.  

The cuisine of Sri Lanka has much in common with those of Thailand and
Indonesia in terms of spices used (a number which are not typical of India)
and the names of dishes which are shared in Sri Lanka, Indonesia, Maylasia,
and the Philippines.
