Drying out leftover bread in preparation for making crumbs from
it can be done very easily by putting it *unwrapped* in a
frost-free freezer for about a week.  The very low humidity in
these freezers does a good job of sucking out moisture (notice how
ice cubes tend to shrink and vanish).  I've thought about trying
the same technique to dry herbs but haven't done it yet.
