I have heard that the sports association for each sport (or set of sports,
e.g. alpine skiing) makes up the rules on what you can do as an amateur.
Several allow athletes to earn a certain amount of money to support
themselves. They can earn quite a lot if they put it into a trust fund; I
don't know what kind of conditions are placed on the fund. By the way,
I'll bet that Descente paid the US Ski Team (not the skiers) to wear their
ski outfits.

I'm not complaining. It's about time amateurs in the West got paid
an amount comparable to the Eastern "amateurs". I wouldn't complain if they
opened the Olympics up to real professionals either.
