			SPINACH with GINGER


			1 package of frozen chopped spinach or
			1 lb fresh spinach (chopped)
			1 tablespoon Urad dhal
			1 cayenne pepper
			1 teaspoon salt
			1 inch cube of ginger root (chopped)

In a frying pan add 2 tablespoons of oil and heat.  When the oil is
hot put in Urad dhal and pepper broken into two pieces.  When the
dhal is brown, add ginger and stir for a few seconds.  If using
fresh spinach, add it and cover and cook at low heat.  Frozen
spinach should be thawed and excess water should be removed.
before adding to the pan.  Add salt and stir.  This will be done
in 10 minutes.
